Spanish cuisine is just as festive and flavorful as the country itself; very exotic and full of life. Chef John has traveled extensively in Spain and has enjoyed cuisine from all corners of the country. Tonight, you will have the opportunity to experience a typical and authentic Friday night dinner just as they are having in Spain. The evening’s menu will includes Black Olive Paste and Blue Cheese Toasts, Marinated Manchego Cheese, Seville Tomato Salad, Paella and Cream Cheese Flan. Don Hackett will undoubtedly pair with this festive Spanish menu with wine gems that are sure to please!

The dynamic duo is back! Join wine educators Jennifer Pounds and Don Hackett as they guide you on a wine and cheese tour of Italy. If you joined them for their class on the wines and cheeses of France, you know that their casual teaching style and years of experience equate to a fun and informative evening. While many are familiar with the king of Italian cheeses, Parmigiano Reggiano, Italy makes dozens of artisanal cheeses. And with over 1000 different grapes grown in the country, there is an almost endless array of wines produced. Jennifer and Don enjoy educating their students on some of the lesser known of both. And they love to have fun doing it!

It's fun to explore different cuisines and grapes from around the country and the world, but we don’t have to travel far to get some of the best there is! There is an abundance of fresh, local ingredients and grapes being grown right in our own backyard! Tonight, Rosemary & Don will not have to venture far for inspiration and flavor, as this menu highlights some of the seasonal best from right here in Georgia! Start with an amuse bouche of Wild Georgia Shrimp with Fresh Corn & Tomatoes. Then, enjoy a Fennel, Radish & Parsley Salad before you dig in to Smoked Bacon-wrapped Pork Tenderloin with Herb, Garlic Mustard Sauce served alongside Wilted Garden Greens with Shallots and Rice. And we aren’t called the Peach State for nothing! Dessert is a light and delicious Soufflé featuring our state fruit – the peach! And from the mountains of North Georgia to the vineyards a little further South, Don will pour some delicious wines that are truly home grown!

The Wines of France - Bordeaux & Alsace

Tonight’s class focuses on what many consider to be the single most important wine region in the world: Bordeaux. In addition to being the largest fine wine producing region on the planet, Bordeaux is home to some of the world’s most expensive wines. A diverse and complex region, Bordeaux’s history dates back hundreds of years. In addition to Bordeaux, students will learn about the often overlooked region of Alsace. With its strong Germanic influence and long tradition of white wine making, this area in northeast France is a hidden gem. (Class II: 8/23; Class III: 8/30)

The Wines of France - Burgundy, Champagne, & Southwest France

Class #2 begins with a look at the world’s best known sparkling wine producing region: Champagne. Tonight we will learn about the different styles of Champagne as well as the complex methods used to make this wine. Next is an in depth examination of the region of Burgundy. The land where Pinot Noir and Chardonnay rule, Burgundy has its own specific set of wine laws and a different approach to winemaking. The evening concludes with an introduction to Southwestern France and the unique grapes grown there. (Class I: 8/16; Class III: 8/30)

The Wines of France - Rhone, Loire, and Provence

Tonight’s class wraps the wines of France into a neat little package. Focusing on the wines of the Rhone Valley, and the significant differences between the northern and southern parts, class #3 completes the picture. Regarded as producing somewhat rustic wines only several decades ago, the wines of the Rhone Valley are now considered to be world class. In addition, we will explore the wines of the Loire Valley, where Sauvignon Blanc reigns supreme, as well as the wines of the south of France, including Provence. (Class I: 8/16; Class II: 8/23)

Who says that breakfast is only for the morning hours? Certainly not Chef Rosemary Rutland and Wine Specialist Don Hackett! They will show you how breakfast food not only makes the perfect dinner, but how easily these foods can be paired with wine to really take things up a notch. Start things off with Chef Rosemary’s Baked Ricotta with Honey & Grilled Fruit. Then, sit back and relax as you learn to prepare a Tomato Cheese Galette, Poached Salmon with Dill Crème Fraiche, Sour Cream Cinnamon Walnut Coffee Cake, and Minted Fruit Salad.
